Spinach Lemonade

I absolutely love juicing ever since I did a 7-day Juice fast last year, but I freely admit that I often have trouble getting enough greens in to my juices. It’s not for lack of wanting to do it, it’s more about how you seem to need so many greens to get so little juice.

But now that we are growing spinach in our vegetable garden, I harvested my first batch of baby spinach this morning and was looking for something to do with it!

My daughter makes me make a batch of fresh lemonade almost every week and I jokingly said to my husband “I should make some spinach lemonade and see if she will drink that!”. After we agreed that there is no way that my daughter would drink anything green (I’m working on her), I decided to try spinach lemonade and see if it was any good.  After all – at the rate my spinach is growing (We are growing it in 3 large pots and I started them several weeks ago). I am going to have plenty!

One way to not need so much spinach to get a decent amount of juice is to process the spinach in the blender.  After you have processed the lemon, apples, pear and cucumber, place a little bit of that juice in your blender along with the spinach and pulse until it is smooth.  You can then strain the juice through a cheesecloth or just mix in the rest of the juice.  I might do this once the summer is over and I am back to having to pay for spinach but, for now, I will just juice the spinach!

Unlike the lemonade that I make for my children, the spinach lemonade gets its sweetness from a pear and apples (instead of sugar).  I think it is fine as-is, but if you want to make it a little sweeter, you can add some Stevia or Agave to keep it low-glycemic.

This refreshing spinach lemonade has just enough sweetness to make you forget you are drinking spinach. Perfect for beginning juicers!

Yield – about 24 oz

Preparation Time – 10 minutes

Ingredients

  • 3 lemons
  • 1 large pear
  • 1 small cucumber or 1/2 large cucumber
  • 2 granny smith apples
  • 6 cups spinach (less if you are blending and straining)
  • Stevia or Agave, to taste (optional)

Directions

  • Peel lemon; Core and quarter pear and apples
  • If juicing everything, process all ingredients except the sweetener in your juicer. Add sweetener if desired
  • If using a high-powered blender for the spinach: process the lemons, pear, cucumber and apples in your juicer. Add the spinach and a small amount of the juice to your blender. Process the spinach until smooth. Strain the juice through cheesecloth (if desired) or just add the remaining juice to the spinach and stir to combine
  • Serve over ice
